2. Add vinegar/lemon juice (optional) and stir briefly.

4. Cut the curd into cubes, let rest 5–10 minutes.
5. Slowly heat to 105°F (40°C), stirring gently for about 20 minutes.
6. Drain in a cheesecloth-lined colander, hang for a few hours.
7. Add salt, shape, and press lightly if you want it firmer.
